So what exactly is Texas Sushi? It's not armadillo roadkill, like my crazy coworker, John, claims. No, Texas Sushi is commonly referred to as Chipotle Bacon Pinwheels** in these parts.

Please note: The full recipe is at the bottom of the post here, but I personally never measure my ingredients (I just "sprinkle and shake until I hear the spirits of my ancestors whisper, 'Enough, my Child'. Ha, ha). It shouldn't take you longer than 20-30 minutes to make this dish.

PREP: You need to broil a few bacon strips (how about 5?) in the oven first, then chop them up into bits so that you'll have fresh bacon bits for the recipe. You'll also need some softened cream cheese, a bowl full of chives and another bowl of chopped black olives. One more thing, grab your favorite hot sauce!

HOW TO MAKE IT: Here's how you make Texas Sushi. Take that softened cream cheese, stick it in a bowl and mix it with some dashes of hot sauce (I prefer Lousiana Hot Sauce, Tapatio or this stuff Oprah was raving about last year, Truff hot sauce). Next, throw in some salt + pepper (to taste), mix in your fresh bacon bits, chives, and chopped black olives.

Make sure you sample a forkful of the mixture to make sure it tastes good enough to eat. Then you grab a flour tortilla and place it on your cutting board. Next, scoop up a spoonful of the mixture and spread it all over the tortilla, roll up the tortilla (tightly). Finally, slice the tortilla roll into "pinwheels".

Voila! There's your Texas Sushi roll. Gobble it up right then and there or you can put it in your fridge to serve later as an appetizer for your next party.
